Garlic Spinach Pesto

 

INGREDIENTS:

  • 8-10 cloves garlic

  • 1 bunch fresh spinach

  • 1 cup fresh parsley leaves

  • 2/3 cup Parmesan cheese, grated

  • ½ cup walnuts

  • 4 flat anchovy fillets

  • 1 Tbsp. dried tarragon

  • 1 tsp. dried basil

  • 1 tsp. each salt & pepper

  • 1 cup olive oil

DIRECTIONS:

Peel and crush garlic.

Toss all ingredients except oil into food processor.

Blend until mixture is smooth.
With motor running, add the oil in a thin stream.

Cover and refrigerate.

Makes approx. 2 cups
