Garlic Linguine

INGREDIENTS:

  • 1 lb. French Brie cheese

  • ½ cup olive oil

  • 1 cup fresh basil, chopped

  • 5-6 garlic cloves, minced

  • 4 large tomatoes, peeled, seeded and cubed (or substitute large canned diced)

  • ½ tsp. each salt and pepper

  • 1 lb. linguine (or substitute angel hair)

  • 6 oz. Parmesan cheese, grated

DIRECTIONS:

Remove rind from the brie cheese and cut into irregular pieces.

In a large bowl toss basil and garlic, add tomatoes, salt and pepper.

Set aside for 1-2 hours to let flavors meld, do not refrigerate.

Cook pasta and drain.

Toss hot pasta with cheese mixture.

Top with Parmesan (or Romano) cheese and serve at once.
